Super Duper Sugar Truffles
To celebrate a friend's return to work I made some Sugar Truffles and Rose Chocolate Cupcakes.
Chocolate Rose Cupcakes can be found here.
This is the first time I've used cookies as my base for the truffle. It definitely makes the final product taste super sugary sweet (which people really liked) but it was the greasiest base I've ever worked with; I had to refrigerate these a lot longer than cake bases.
I used ghiradelli white melting chocolate wavers instead of candy melts and I loved it!!! For these wafers I melted them in the microwave with a ceramic mug. While the bottoms of the truffles are messy, the overall chocolate coat was the smoothest I've ever done so far. I've still gotta figure out how to nicely get the truffles off the fork and onto the pan after coating them.
These were a hit at work and went quickly! I managed to nab one for myself though. Yay for desserts in the morning! :)
