Mint Chocolate Brownies
For St. Patty's day you HAVE to make something green. Since these were for work I needed something relatively easy to make in mass quantities. Brownies seemed like they'd do just the trick! I used this recipe from Mom's Desk to make these Mint Oreo Marshmallow Brownies. They're a little messy and sticky so I'd suggest cutting them up into squares ahead of time for easy grabbing, but once you've separated a piece for yourself they are delicious!
What You'll Need
- 1 Box Brownie Mix
- 1 Jar of Marshmallow Fluff
- 2 tsp Mint Extract
- 15 drops Green Food Coloring
- 1 package of Mint Oreo Cookies, crushed
I used a store bought Betty Crocker Brownie Mix to speed things up. Time to add the marshmallows!
I used marshmallow fluff, green food dye and mint extract for the "frosting." It likes to do that marshmallow thing where it sticks to whatever it lands on and not move from there. That will not do!
I used a toothpick to spread the rest of the marshmallow fluff out. Much better!
I crushed the Mint Oreos and spread them over the top. I think we're done right? That was a piece of cake! (Or brownie...bahahaha...I'll let myself out.)
I love the different colors and textures throughout the brownie. I might streak some fudge over the top next time, or maybe some green whipped cream.
