Easy Valentines Day Red Velvet Cupcakes

What You'll Need


  • Your favorite red velvet box mix (plus the ingredients to make it)


  • 1 cup unsalted butter (2 sticks or ½ pound), softened
  • 3-4 cups confectioners (powdered) sugar, sifted
  • ¼ teaspoon table salt
  • 1 tablespoon vanilla extract
  • up to 4 tablespoons milk or heavy cream

    Beat butter with a mixer on medium speed until light and fluffy. Set the mixer to the lowest speed and slowly add the 3 cups of powdered sugar. Don't add it all at once or the sugar will blow everywhere. Mix until the sugar has been incorporated with the butter. Add vanilla extract, salt, and 2 tablespoons of milk/cream, increase mixer to medium speed and beat for 3 minutes.

    Note: For stiffer frosting add remaining sugar. For thinning out frosting add 1 tablespoon of milk or cream at a time.




Cupcakes have been made, now it's time for frosting!


For these I'd like to try a smooth frosting instead of a star or flower tip. I got these extra large frosting tips on Amazon here.


RUINED. I'm a dummy and can't get the frosting tip through now. D:


SAVED. Thanks to a second bag I don't have to try and take the frosting out of the first bag. Phew!


So I need to admit something here. I only did half of the frosting recipe I listed above because I thought I wouldn't need 2.5 cups of frosting. I was WRONG. You should absolutely follow the whole recipe. The frosting ended up coming out a little weird because I ran out way too fast and had to fight air bubbles.


But once the pretzels are on you can't even tell! (Saved again!)

And there you have it! Easy red velvet cupcakes for Valentines Day. The pretzels not only look great as a topper, but the little addition of salt pairs really well with the cupcake.


Now I'm definitely a "pile the frosting on" kind of girl, but I know that's not how everyone else is. Here's an red velvet cupcake with less frosting; it's so cute!
