Chocolate Chip Banana Muffins
This muffins happened as the result of a major chocolate attack and not having anything chocolatey in the house. I found this recipe from Designed Decor and was intrigued by the use of sour cream and overall few ingredients. The butter definitely helps to keep these muffins moist, but I'd be interested to try a recipe that swaps in something like Greek Yogurt in place of some of the butter in the future.
Overall the chocolate chip banana muffins weren't as flavorful as I was hoping, but I also used bananas that were barely ripe. I had grabbed them from the store an hour before and decided I couldn't wait any longer to make something chocolatey.
So! For now I'm saying that's not the fault of the recipe, but my impatience for not letting the bananas ripen. :P
What You'll Need
- 1 cup white sugar
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 3 tablespoons sour cream
- 2 eggs
- 1/2 cup butter, softened
- 2 or 3 ripe bananas - I used 3
- 3/4 cup chocolate chips
Oven: 350 degrees
Cook Time: 20 minutes (or until golden brown)
First I mushed all the bananas together.
Next I combined all the dry ingredients: sugar, flour and baking soda.
Now it's time to mix the wet ingredients. Here I mixed the butter and eggs together, but in hindsight it'd probably be better to cream the butter first and THEN add the eggs.
Next I added the sour cream, vanilla and bananas, making sure to mix in each one after being added.
Then we'll pour in the dry ingredients. With the mixer on the slowest setting I slowly poured in the dry mixture. Make sure everything has been mixed and moist.
Finally, mix in the chocolate chips and stir until just incorporated.
Pour the batter into greased muffin tins or wrappers. I tried sprinkling some cinnamon on the tops of the last batch just to try it out. Next time I'll try mixing it into the batter!
Bake for 20 minutes or until nicely golden brown. I like my muffins a little gooey so I took them out a bit early. :P
Overall the muffins were incredibly moist! I think the butter and sour cream had a hand in that. ;)
Get ready for a bunch of practice photography photos! It was a fun challenge trying to figure out how to best showcase all the muffins.
