Dark Chocolate Energy Bites
I don't know about you, but I almost ALWAYS crave chocolate and eat it pretty much every day. (I'm sure that's not a problem...) The issue of course is trying to find something to satisfy that craving without blowing your diet out of the water.
That's where this recipe from SmileSandwich comes in handy! The combination of bananas, peanut butter and dark chocolate come in handy for a variety of different things:
Afternoon pick me up (you know that sleepy lull between lunch and dinner)
Post workout snack
This recipe is completely no bake, only requires 4 ingredients, and is so easy to make it's a must-have for those who need help with sudden chocolate urges!
What You'll Need
- 2 medium ripe bananas
- 1/4 cup creamy nut butter of your choice
- 3/4 cup baking chocolate
- 1 1/2 tablespoons coconut oil OR shortening
Let's begin by cutting up the bananas into thin slices. They'll be sandwiched together so if they're too thick it might be hard to bite into.
Now we'll make them sandwiches using the peanut butter! From here you'll want to freeze the banana peanut butter sandwiches for at least 30 minutes, or until they're not so soft and squishy. We don't want them to fall apart as we dip them!
I ended up freezing mine for a little over an hour to ensure they were solid enough.
Now start melting your dark chocolate.
I noticed that the coconut oil worked very well to help loosen the chocolate, but also imparted a fairly strong coconut taste to the final dessert bites. I like coconut so that was fine, but if you're not a fan I would suggest using shortening instead. :)
Once the chocolate has melted and easily falls off your spoon, it's time to dip the bananas! Despite our freezing efforts, these defrost very fast so I only took out 2-3 to dip at a time and left the rest in the freezer to stay solid.
These were harder to dip than the usual cake pop...I blame their flat sides! At least it meant more tasty dark chocolate staying on the tops. :P
After all the energy bites were dipped I stuck them in the fridge to solidify for an hour. Then we're done guys, how cool is that? Tasty treats that require no baking and only four ingredients! I hope you enjoy them as much as I do!
