Sheet Pan Chicken Fajitas

Sheet Pan Chicken Fajitas

This recipe from Cooking Classy lets you prepare a fajita dinner all in 1 pan -  it saved a lot of time! Definitely hanging onto this for a fast and easy dinner option.

What You'll Need

Seasoning

  • 2 tsp chili powder (preferrably 1 tsp ancho chili powder 1 tsp regular)
  • 1 1/2 tsp ground cumin
  • 1 tsp ground paprika
  • 1/2 tsp ground coriander
  • 1 1/2 tsp Salt
  • 1/2 tsp black pepper

Fajita filling

  • 1 1/2 lbs boneless skinless chicken breasts, sliced into 1/2-inch thick strips (slice extra wide strips in half)
  • 1 of each red, green and yellow bell peppers
  • 1 medium yellow onion
  • 2 cloves garlic, minced
  • 3 Tbsp olive oil
  • 2 Tbsp fresh lime juice

For serving

  • 8 taco size flour tortillas

Optional

Sour cream, avocado slices/ guacamole, diced tomatoes, Mexican cheese blend, cilantro

Oven: 400 degrees
Cook Time: 18-25 minutes

Core and slice the peppers into strips. Then cut the onion in half and slice it from top to root. Mince 2 cloves of garlic. I think I totally forgot to add garlic to this recipe....it still tasted great but I'll be sure to make it again with garlic.

Now we'll prep the seasoning. In a small bowl mix together chili powders, cumin, paprika, coriander, salt and pepper.

Instead of mixing the seasoning in on the pan, I took half of the seasoning and mixed it with the chicken first.

Grab a 17x12 inch baking sheet and grease it (I used non-stick cooking spray). Now place the veggies and chicken on the pan. Over the pan, sprinkle the rest of the seasoning and the minced garlic, drizzle the olive oil, and toss until the chicken and veggies are evenly coated.

Be sure to separate the chicken on the pan so it doesn't try to merge together when baking. :P

We're ready to stick it in the oven! Move around/toss the chicken and veggies halfway through cooking to help them evenly cook, and in the last 5 minutes you can add in your tortillas for heating.

Once the fajitas are out of the oven and cooling you can drizzle the lime juice evenly over the pan. Add any optional sides you'd like and you're ready for dinner! I added avocado and cheese...yum. :)

With the chicken fajitas all in one pan cleanup isn't too bad either- bonus!
