Roasted Mixed Veggies
A fairly straightforward recipe that's easy to add as a side dish to any lunch or dinner! It's also my go-to when I need to use up leftover veggies. :)
What You'll Need
- 5 cups fresh broccoli florets
- 2 cups sliced carrots, sliced
- 1 cup red bell peppers, sliced
- ¼ cup water
- ½ tsp salt
- 1/8 tsp black pepper
- ½ medium onion, sliced
- 2 cloves garlic, chopped
- 2 tbsp olive oil
Chop up your veggies: garlic, onion, carrot, pepper and broccoli.
Grab a skillet and heat the oil on medium-high heat. Add onions and garlic and saute until the onion become fragrant and translucent. Mix to ensure garlic doesn't burn.
Add carrots and cook for 3 minutes. Then add the broccoli, bell peppers, salt and pepper. Mix thoroughly.
Turn the heat to medium. Add the water and cover the skillet, letting everything cook for 5 minutes. This will still leave a bit of a crunch in the veggies. You can continue cooking for another few minutes if you want softer veggies.
Once they're done cooking you're ready to serve! You can sprinkle with any additional salt and pepper if needed.
From the picture you can see I tried to add SOMETHING healthy to our fried chicken dish. Had to at least try. :P
